Does Disk Server provide security to files put on the Disk Server?

Security is set by Share (folder) level. File-level access is not supported. Access to Shares is set by User Group, not by individual user. Access to a share can be Read-only, Read/Write, or no access. However, because AppleShare does NOT support Read-only access, this is treated as Read/Write for Macintosh clients.
